Good to see that you want to become an IAS officer so I want to tell you that there is no any graduation degree which will help you more or less in your UPSC CSE preparation.
So you can go with any stream and then can start your preparation from the first year of graduation. Do that thing which excites you which interests you and in which you can give much time without getting bored because at the end interest matters.
If you'll ask with me that which degree will help you in your UPSC CSE preparation I will suggest you to go with Bachelor in Arts as its most of the syllabus concerned with UPSC CSE syllabus and will surely help you.

Coaching will give you enough study material as well as guidance from experienced teachers but after a long time, you will not get enough output from these institutes.
There are few good institutes you can trust upon if you are a Hindi medium aspirant like Drishti, Patanjali etc. But still I will suggest if you are a Hindi medium student then you can prepare from NCERT books and make your own notes to make your GK stronger.
These days the Civil Services exams is based on totally current affairs. You can trust on some online sources like Wikipedia (Hindi and English), Sansar Lochan, Vision IAS Hindi Test Series bla bla.
I know there are few sources for Hindi medium students but still you can fully trust on the above websites I mentioned. You should also have knowledge about English because you are going to be an IAS officer. That is why keep searching English sources also for the particular topic you’re searching for.

For beginners who are completely new to the domain of economics, go through NCERTs book for gaining the understanding of the fundamentals, the content is written is easy to understand language, and there are many good creators in YouTube as well who have uploaded these lessons as well, so if you're someone who feel more comfortable in understanding concepts through audio-video medium, you can refer this, other than that personally I have found Indian Economy by Ramesh Singh to be a great book as all the topics are covered in elaborative manner, and the language too is easy to comprehend, you can also refer Indian Economy by Sanjiv Verma which is equally a good option, other than this supplement your preparation with budget and economic survey, you can go through yojana magazine, and the economic edition of pratiyogita darpan too is quite good, if you have time you can go through that, even the regular book which comes out every month is pretty good for preparation of any compeitiive exam.
I want to tell you the basic eligibility to appear in UPSC CSE examination to become an IAS officer is you must have an undergraduate degree from any recognised University in whatever stream. There is no such best or worst degree for becoming an IAS officer.
Yes some of the degrees may help you in your UPSC CSE preparation as their syllabus and UPSC CSE syllabus mostly overlaps. One such very popular degree is Bachelor in Arts. But you can do your graduation in any stream according to your interest and remove this from your mind that any degree is best or worst for UPSC CSE.
